Lemon Pepper Fresh Flounder Fillets

Place oil and 2 tablespoons butter in flat heavy bottomed skillet and heat on medium high until butter melts. Melt butter in a glass baking dish that will hold the flounder in a single layer.

Sprinkle with salt and pepper. Place the fillets in the dish with the butter turning them several times to make sure they are well buttered. Arrange the pieces in the prepared baking dish.
